Spam and Egg Musubi


This popular snack in Japan and Hawaii is simple and delicious. In Hawaii, these are EVERYWHERE. They are sold in all the gas stations, snack shops, some restaurants, the movie theaters and a part of every child's lunch bag. People bring these to share at potlucks and parties and enjoy them as a quick snack. Yes, it contains spam, but fried crispy, it's delicious. Make this today as a light lunch or a quick snack. Trust me, it's great straight out of the fridge.


1 can Spam, sliced into 1/4 thick slices (save the can, but remove the lid)

4 tbsp teriyaki sauce (my husband doesn't like teriyaki sauce, so the musubis in the photo don't have teriyaki sauce)

8 eggs

1 tbsp soy sauce

1 tbsp olive oil

2 sheets Nori (Japanese dried seaweed sheets)

2 cups cooked white rice (make sure the rice is extra starchy, so it binds properly)

Furikake, optional (Japanese rice seasoning)


Fold the nori sheets into 4 strips lengthwise. Either tear along the perforations you folded or cut with kitchen shears or a sharp knife. Set aside.


Heat a large skillet over medium high heat. Heat the drizzle of olive oil. Scramble the eggs and add the soy sauce. Pour into the pan and cook until dry at the top. Do not scramble in the pan. You want the egg to be crepe-like.


Set the egg crepe aside. You may have to make 4 eggs in the separate batches.


In the same pan, fry the spam on either side until crispy and browned (about 5 minutes per side). Add the teriyaki sauce to the pan and simmer for about 3 minutes, until thick. Set aside.


You can either use a musubi mold to shape the rice, or place a scoop of rice in the center of a sheet of plastic wrap, gather the sides and press the rice down in the Spam can to mold the rice in the shape of the Spam. Use the Spam can or the musubi mold to cut the egg crepes into Spam-shaped slices and set aside. Place the Spam-shaped egg, then the teriyaki sauce-coated Spam slice, then wrap a sheet of nori around this. If not planning to eat right away, wrap in a plastic wrap to hold the shape and for storage and transportation.
